Lisa Perrotti-Brown: The 2018 Aromes de Pavie is made up of 65%Merlot, 18% Cabernet Franc and 17% Cabernet Sauvignon, harvestedSeptember 27 to October 8 with yields of 42 hectoliters perhectare. The wine has a 3.56 pH and 14.42% alcohol. Very deeppurple-black in color, it is a little shy to begin, opening out togive scents of baked black and red cherries, mulberries andblackberry tart with suggestions of licorice, mocha, tilled soil,smoked meats and lilacs with a touch of oolong tea. Full-bodied,the palate is jam-packed with ripe, rich black fruit, framed byfirm, rounded tannins and seamless freshness, finishing long andsavory. This is a very serious second wine that bears more than apassing resemblance to Chateau Pavie.
