Chateau Cissac is a wine estate in the heart of the Haut-M嶮ocadjoining the Saint-Est鋯he and Pauillac appellations. It makes arange of wines based largely on Cabernet Sauvignon. Though thecategory is now reviewed with each vintage, at the time of writingthe grand vin was classified as a Cru Bourgeois Sup廨ieur.The vineyards at Ch漮eau Cissac cover approximately 100 hectares(247 acres) in a single tract of land. This is nestled betweennearby Cissac village and the surrounding woodlands.70 percent is planted with the traditional M嶮oc grape variety,Cabernet Sauvignon. This variety is perfectly suited to the terroirhere, with a largely sandy gravel soil overlaying clay andlimestone.While Cabernet Sauvignon forms the base of the wines, Merlot andPetit Verdot (around 22 and 8 percent of the vineyard) are used tobring roundness and depth to the blends. A mix of manual andmechanical harvesting is employed.Three wines are made at Ch漮eau Cissac:Chateau CissacReflets de Ch漮eau Cissac: the second wine, made from younger vinesCh漮eau du Breuil (not to be confused with the Calvados property ofthe same name). Made from a neighboring vineyard planted witharound 52 percent Merlot, 41 percent Cabernet Sauvignon and 8percent MalbecFermentation takes place in large wooden vats, and the wines arethen aged in barrel, around 30 percent of which is new. Around20,000 cases of the grand vin are produced each year.
